Since 1880, the town of Pluma Hidalgo, Municipality of Oaxaca, has been known for its extensive
coffee production, especially for Pluma coffee, which is derived from the fruits of the Coffea arabica
plant species, mainly from the typica variety and since February 4 of 2020, the Mexican Institute of
Industrial Property (“IMPI”) carried out the General Declaration for the Protection of the Denomination
of Origin (“Declaration of Origin”) of Pluma Coffee.
Enter the siblings Villarreal, Sofie & Pancho; physician and engineer respectively, both from the northern
state of Coahuila, more than 20 hours away from Oaxaca. The past few years of investment they built
roads, planned and carved their way into the mountain, they germinated their own seed bank and
nursery, planted their crops into strategic lines, separating varieties and making sure that the trees
receive proper shade.
They harvest by hand, with selective picking, taking only deep red ripe coffee cherries at a time and
going back a few days later to the same trees to pick again the remaining fruits as they ripen. It’s a
laborious and expensive maneuver, but it pays off quite nicely in the final cup quality.
